Astro is the most widely grown garden arugula variety — a slow-bolt cultivar selected for milder, less-bitter flavor compared to wild types (Sylvetta/Roquette). Baby leaf in 21 days, full harvest at 38-40 days. Peppery flavor intensifies with maturity and heat. Bolts quickly once temperatures exceed 75°F but excellent for succession planting. Germinates well in cold soil (40°F+), making it one of the earliest crops you can sow. Widely referenced in OSU, Cornell, and Territorial Seed extension recommendations for home gardens in zones 5-9.
