Chioggia Beet
Amaranthaceae
Italian heirloom (1840s). Dramatic red-and-white concentric rings (bulls-eye pattern) visible when sliced. Milder, sweeter than Detroit Dark Red. Rings fade when boiled — serve raw or lightly roasted for best visual effect. Striking appearance makes this an excellent 'garden excitement' crop.
