Mâche (Corn Salad)

Also called corn salad or lamb's lettuce. ONE OF THE MOST COLD-HARDY GREENS — thrives in winter conditions that kill most other crops. Survives to 5-10°F. Nutty, concentrated butterhead-like flavor. Very small rosettes (2-4 inch diameter). SLOW to mature (60+ days). Seed goes DORMANT above 68°F — must plant when soil is cool. Cannot tolerate any heat — bolts within days of warm temperatures. Self-sows readily. The winter specialist — the inverse of Swiss chard.
