Pattypan Squash
Cucurbitaceae
Among oldest cultivated squash (pre-1700s, Native American origin). Flat disc with scalloped edges, pale green maturing to creamy white. Denser, less moist flesh than zucchini — firmer texture. Excellent stuffed, grilled, or roasted. Extremely prolific. Less SVB-susceptible than zucchini. Harvest at 2-4 inches diameter (golf ball to tennis ball). Can eat as small as 1 inch. Seeds toughen above 4-5 inches.
