Red Cabbage
Brassicaceae
Identical care to green cabbage but 5-15 days slower to mature. Deep purple anthocyanins provide mild cold protection and higher antioxidants. Ruby Ball (70-75 DTM) is a good fast variety. Fall planting slightly preferred. Same splitting management as green cabbage. Stores 3-4 months (slightly less than green).
